Hearts of Palm Guacamole

   

HEARTS OF PALM GUACAMOLE

1 large, ripe Avocado half mashed, the other half diced

1 medium Tomato, chopped finely

1 Teaspoon Salt

1 Teaspoon Lime Juice

2 Teaspoons Salad Oil or light Olive Oil

1/4 Teaspoon Garlic Powder

1/4 small Onion, grated or 1 Scallion, minced

2 Tablespoons Parsley or Cilantro, chopped (optional)

1 Can Hearts of Palm, drained, rinsed and sliced in thin rounds

Mix all the ingredients together and refrigerate.  Serve with crackers

or vegetables .
